Curry gulai with tofu, green beans and mushrooms 🌱🌶️🌶️ – Sayur lodeh – 53 lei
A curry (gulai) recipe from Sumatra and Java, with exotic flavors: tofu, green beans, mushrooms and fresh mung bean sprouts in a Sumatran curry (gulai) with: coconut milk, galangal, ginger, candlenuts, turmeric, tamarind, lemongrass, shallot, garlic. cayenne and Thai chili peppers, cinnamon, star anise, cloves, lime leaves. Rice, 2 eggs, carrot, cabbage, green onion, shallot, garlic, sweet soy sauce, salty soy sauce, tomato sauce, sesame oil, oyster sauce, white pear, garlic, salt. Served with acar salad: pineapple, cucumber, carrot, red onion, whole chili pepper and rice vinegar, shrimp chips and, separately, sambal ijo (green chili peppesr paste). A light dish from Batavia (Jakarta) with tofu (soybean), carrots, green beans, fresh mung bean sprouts, cabbage and lontong (pressure-cooked rice). The sauce makes this dish special: pan-fried peanuts, tomatoes, garlic, sweet soy sauce and a little bit of chili peppers. 500gr. Served at room temperature, and seasoned with sweet soy sauce and lime. Indonesians also add sambal: hot chili peppers and garlic paste.

TEMPEH 🌱
Tempeh is a food made from soybeans, original from Java, a brand of Indonesian cuisine, rich in proteins, fibers and minerals. It is obtained by fermenting de-hulled soybeans, in a process that keeps them whole and preserves their nutritional properties.

Beef black soup with rice 🌶️🌶️– Nasi rawon – 50 lei
An almost 1000 years old recipe from East Java: beef thigh (170gr) slow cooked with keluwak (pangium fruits – which gives the dark color), galangal, kencur (aromatic ginger), lemongrass, shallot, garlic, tamarind, turmeric, Indonesian bay leaves (daun salam), lime leaves, sweet soy sauce, coriander seeds, cumin, cinnamon, cayenne hot peppers. Served with Jasmine rice, fresh mung bean sprouts and lime. Optional, add some: sambal pedas (hot chili peppes a d garlic paste) and lime. 500gr.

Beef stew with urap vegetables 🌶️🌶️– Nasi ayem – 59 lei
The Lombok’s version of the Sumatran rendang stew, probably the most famous Indonesian dish. Beef , thigh, coconut milk, candlenuts, aromatic ginger, turmeric, garlic, cayenne pepper, chili pepper. Urap: green beans, cabbage, mung bean sprouts, coconut, aromatic ginger, chili pepper, garlic.
